Roast the sweet potatoes at 350 degrees for one hour
While the potatoes are cooking, brown the ground beef in olive oil and 1 tsp of iodized salt
Remove the ground beef from the pan but leave the remaining fat and cook the onions and peppers until they are soft
Add the beef back to the pan along with the remaining ingredients and simmer for 10 minutes
Stuff the potatoes with the meat mixture and enjoy!
