Mom’s Favorite Chicken Noodle Soup

Ingredients

  • 1 box gluten free pasta
  • 2 T olive oil
  • 1 yellow onion
  • 4 carrots
  • 4 ribs celery
  • 1 tsp garlic powder
  • 1 tsp ground ginger
  • Pinch of red pepper flakes
  • Pinch of black pepper
  • Pinch of white pepper
  • 2 tsp salt
  • 1 32 oz box of chicken stock
  • 1 large chicken breast cubed
  • Fresh dill

Instructions

  1. Cook the pasta in a separate pot.  I use this pasta.

  2. In a large soup pot, cook the onion in the olive oil until the onion is translucent
  3. Add in the carrots and celery and sauté until the veggies begin to soften, about 5 minutes
  4. Sprinkle in the garlic powder, ground ginger, red pepper flakes, pepper and salt
  5. Stir everything together and let it cook about 1 minute
  6. Pour in the chicken stock and scrape the brown bits off the bottom of the pot. There is a lot of flavor in those brown bits!
  7. Bring the soup to a boil and add in the chicken.
  8. Simmer the soup for 10 minutes
  9. While the soup is simmering, drain the pasta

Recipe Notes

I serve the soup in a bowl by adding the pasta (I use this one) to the bottom of the bowl, ladle in the soup and top with fresh dill.
