Cut the pork into large chunks (small enough to fit into the Instant Pot)
Add remaining ingredients to Instant Pot
Press manual setting on Instant Pot and cook at high pressure for 60 minutes
I let the pressure release slowly for 20 minutes before I manually release the remaining pressure
The pork should fall off the bone at this point. If it doesn't, pressure cook for another 30 minutes.
Turn on the broiler in your oven
Remove pork from the juices and spread thinly on a baking sheet
Mix the seasonings (cumin, coriander, turmeric, garlic powder, salt and pepper) together and sprinkle on top of pork
Set the pork under the broiler for 5-10 minutes. Keep a constant eye on it. Broilers can cause things to burn within seconds. I usually turn the pan a few times under the broiler so all the pork gets even crispiness.
These carnitas can be used in so many ways. I love to make taco bowls with them but obviously tacos are great too!
