Start by making the quinoa. Bring 1 cup water to a boil and add the 1/2 cup of quinoa and a pinch of salt. Stir, reduce the temp to low/medium and cover the pan.
Cook for 15 minutes or until the quinoa has absorbed all the water
Transfer to a mixing bowl and store in the refrigerator until it cools
Add all ingredients into a bowl and whisk together
Set aside
Once quinoa is cooled, add all the remaining ingredients along with the dressing
Mix together and serve
If you choose to use the feta cheese, mix in now
