Breakfast Casseole

Ingredients

  • 1 lb mild Italian or breakfast sausage
  • 1 bell pepper
  • 1 large sweet potato
  • 10 eggs
  • 1 T Primal Palate Breakfast Blend

Instructions

  1. Heat the oven to 375 degrees
  2. Brown the sausage
  3. While the sausage is browning, cube the sweet potato
  4. Add the sausage to a 9x13 baking dish
  5. Cook the sweet potatoes in the sausage drippings until soft. I cover with a lid so the steam cooks the potatoes quicker.
  6. While the potatoes are cooking, cube the bell pepper and layer on top of the sausage.
  7. Whisk 10 large eggs with 1 T of the breakfast blend
  8. Layer the potatoes over the sausage and bell peppers and pour the egg mixture on top of the meat and veggies.

Recipe Notes

Note: I use the mild Italian sausage when doing Whole30 because there is no sugar in it.  Otherwise, I use breakfast sausage.  If you do not have the Primal Palate Breakfast Blend then you can mix salt, granulated garlic, powdered onion, oregano, cinnamon, turmeric and sage together.
