It’s October, which means a few things: 1) it’s Fall, 2) it’s pumpkin season and 3) it’s my birthday all month long! I’ve been celebrating by eating this pumpkin chocolate chip mug cake. It’s so easy and tastes like Fall in a mug!
I’m not a great baker but I do love a good brownie mug cake so I thought why can’t I make a pumpkin mug cake and add some chocolate chips just for fun!
This pumpkin chocolate chip mug cake satisfies that sweet tooth but it also has lots of healthy fats and fiber so, don’t feel too guilty about whipping this up for a treat. You simply mix all the ingredients into a mug, microwave it for 90 seconds and voila, you have cake!

Pumpkin Chocolate Chip Mug Cake
Ingredients
- 1 T Ghee or Grass-fed Butter
- 3 T Almond Flour
- 1 tsp Pumpkin Pie Spice
- 1/4 tsp Baking Soda
- 1/4 tsp Flaky Sea Salt
- 1.5 T Canned Pumpkin
- 2 tsp Maple Syrup or Molasses Depending on how sweet you like it, add more to your taste
- 1 Egg yolk
- 1 T Mini Chocolate Chips I use Enjoy Life
Instructions

Mix all the ingredients together in a mug and microwave for 90 seconds

Note: I usually melt the ghee/butter in the cup first and then add the remaining ingredients

Can you replace another GF for almond?
