Who doesn’t love crispy carnitas?!  These carnitas are one of my favorite things to make for a large crowd.  Set them out with a bunch of taco toppings, chips and dip and you have an easy spread for a lot of folks.  Don’t forget to include my pineapple salsa and guacamole in your spread.

What You’ll Need

  • Pork butt/shoulder – bone-in (approx 5.5 lbs)
  • Onion
  • Garlic
  • Oranges
  • Limes
  • Cilantro
  • Spices
  • Instant Pot

How to Make these Crispy Carnitas

Start by cutting the pork into large chunks (small enough to fit into the Instant Pot).  Add the remaining ingredients (not including the seasons/spices) to the pot.  Cover and set manual setting to high pressure for 60 minutes.

After 60 minutes, I let the Instant Pot slowly release it’s pressure before I manually release the rest of the pressure.  The pork should fall off the bone at this point.  If it does not, put it back in the Instant Pot for 30 minutes on high pressure.

Turn on the broiler in your oven.  Remove the pork from the Instant Pot and spread thinly on a baking sheet.  Mix the spices together and sprinkle onto the pork.

Set the pork under the broiler for 5-10 minutes. Keep a constant eye on it. Broilers can cause things to burn within seconds. I usually turn the pan a few times under the broiler so all the pork gets even crispiness.

These carnitas can be served so many ways. I love to make bowls or tacos with them and serve with lime, cilantro, pineapple salsa, avocado or guacamole, red cabbage and plantains.

  • 2 Oranges juiced
  • 1 Lime juiced
  • 3 cloves Garlic
  • 1 Onion chopped

  • 1/2 tsp Cumin
  • 1/2 tsp Coriander
  • 1/2 tsp Turmeric
  • 1/2 tsp Garlic powder
  • 1 tsp Salt
  • 1/2 tsp Black pepper

Toppings

  • Cilantro
  • Limes

Instructions

  1. Cut the pork into large chunks (small enough to fit into the Instant Pot)

  2. Add remaining ingredients to Instant Pot

  3. Press manual setting on Instant Pot and cook at high pressure for 60 minutes

  4. I let the pressure release slowly for 20 minutes before I manually release the remaining pressure

  5. The pork should fall off the bone at this point. If it doesn't, pressure cook for another 30 minutes.

  6. Turn on the broiler in your oven

  7. Remove pork from the juices and spread thinly on a baking sheet

  8. Mix the seasonings (cumin, coriander, turmeric, garlic powder, salt and pepper) together and sprinkle on top of pork

  9. Set the pork under the broiler for 5-10 minutes. Keep a constant eye on it. Broilers can cause things to burn within seconds. I usually turn the pan a few times under the broiler so all the pork gets even crispiness.
