This breakfast casserole is a go-to when I’m doing Whole30 but it’s also just a great everyday casserole. It’s the perfect way to start your morning. I add some fruit with it if I’m having sugar cravings. I used to take the leftovers of this casserole to work and everyone around me would ask what I was eating because the scent from the breakfast blend would waft over the cubicles for everyone to smell and they all wanted to eat it!
If you live near a Harris Teeter grocery store, you can now get Primal Palate’s Breakfast Blend in the spice aisle! If you do not have the Primal Palate Breakfast Blend then you can mix salt, granulated garlic, powdered onion, oregano, cinnamon, turmeric and sage together.
This casserole is super easy to whip up and throw in the oven too. If you are a busy family, just throw this together on Sunday when you are meal prepping. You’ll be glad you did when Monday morning comes around.

Breakfast Casseole
Ingredients
- 1 lb mild Italian or breakfast sausage
- 1 bell pepper
- 1 large sweet potato
- 10 eggs
- 1 T Primal Palate Breakfast Blend
Instructions

Heat the oven to 375 degrees

Brown the sausage

While the sausage is browning, cube the sweet potato

Add the sausage to a 9x13 baking dish

Cook the sweet potatoes in the sausage drippings until soft. I cover with a lid so the steam cooks the potatoes quicker.

While the potatoes are cooking, cube the bell pepper and layer on top of the sausage.

Whisk 10 large eggs with 1 T of the breakfast blend

Layer the potatoes over the sausage and bell peppers and pour the egg mixture on top of the meat and veggies.

Seriously, this is so good that you shouldn’tmake it just for breakfast. Itās a frequent ābreakfast for dinnerā along with a green salad for me. Love it! BTW it works with any flavor sausage or even ground pork!
