This watermelon caprese is a sweet, refreshing treat that will be hit with your friends and family all summer long.

Have you ever noticed that watermelon has the same texture as a big ripe tomato?  Who doesn’t love caprese which is a large tomato sliced and served with mozzarella, basil and balsamic.  I’ve always wondered why people mix feta with watermelon.  To me, the creamy mozzarella goes so much better with it.  One day, I created watermelon caprese and I loved it so much that I had to share with you all.

Benefits of Watermelon

Watermelon isn’t just something that we should eat at 4th of July BBQs.  It’s actually healthy for you!  Watermelon is over 90% water and has potassium and magnesium in it, so it’s extremely hydrating on hot summer days.  It’s also a great source of lycopene, Vitamin C and B vitamins.  It was once thought that only tomatoes had lycopene but now there are proven facts that watermelon also contains appreciable amounts of lycopene. ¹

Watermelon is also great for heart health.  High intake of lycopene lowers the thickness of the internal layer of the blood vessels thus reducing the risk of myocardial infarction. ¹  Consumption of watermelon is more advantageous, as lycopene is readily available through watermelon. ¹

How to Make Watermelon Caprese

It’s so simple, really!  You simply dice up a watermelon.  I have an Instagram Reel showing you how simple it can be.  Click HERE to watch that Reel.  Drain the liquid off the mozzarella balls and rinse them.  Tear some fresh basil into pieces.  I like to tear it better than chopping it.  When you cut basil, you bruise it so I gently tear it into small pieces to sprinkle on top of my caprese.  Drizzle everything with balsamic vinegar if you like.  Enjoy!!

Ingredients

  • 1 Seedless Watermelon diced
  • Mozzarella Balls drained and rinsed
  • 4 Basil Leaves tear into pieces
  • 1 T Balsamic drizzle

Recipe Notes

This recipe is really based on how big your watermelon is after you dice it up.  I use a small seedless watermelon, 1 container of mozzarella balls, as much basil and balsamic as I want!
