Every time I cut open a pineapple, I think of Hawaii. This pineapple salsa is a breeze, a Hawaiian breeze if you will, to make! You simply dice the pineapple, red onion, jalapeno into similar size pieces, chop the cilantro, mix it all together and squeeze a fresh lime juice over it. It’s really that easy!

PINEAPPLE SALSA IS SO VERSATILE
I love to serve this salsa with shrimp tacos or carnitas. It’s really delicious with salmon. I even add in a few pomegranate seeds when I serve with salmon. You could simply eat it with some tortilla chips! Or, it would be great addition to my Salmon/Sweet Potato Patties.

Pineapple Salsa
Ingredients
- 1 Pineapple diced
- 1/2 Red Onion diced
- 1 Jalapeno diced
- 1 Lime juiced
- 2 T Cilantro chopped
Instructions

Dice the pineapple, red onion and jalapeno into similar size pieces

Chop the cilantro

Mix everything together and squeeze the lime juice over the bowl
