I love Halloween!  My all time favorite Halloween was in Amarillo, TX.  My friend Jody’s birthday is on Halloween so we always dressed up and went out to celebrate.  This particular year, I dressed up as Spongebob Squarepants!  Check us out.  We were just babies back then.

This Halloween, I handed out candy and whipped up these cute little jack-o-lantern stuffed peppers.  You can pre-make them (but don’t bake them) the night before and put them in the fridge.  Pull them out and bake them before you head out to trick or treat for the evening.  These guys are so easy to make and so stinking cute.  They are almost too cute to eat, ALMOST.  

Halloween Jack-o-Lantern Stuffed Peppers

Ingredients

  • 4 orange bell peppers
  • 1 lb ground sausage
  • 1 small yellow onion
  • 2 ribs celery
  • 2 carrots
  • 1 12 oz bag riced cauliflower
  • ½ tsp garlic powder
  • 2 springs fresh thyme or 2 pinches dried thyme
  • ¼ tsp dried ground sage
  • ¼ tsp dried ground thyme
  • ¼ cup dried cranberries chopped
  • ¼ cup pecan halves chopped

Instructions

  1. Preheat oven to 350 degrees
  2. Carve the jack-o-lantern face into the peppers and save the cut outs to cook with the onions
  3. Cook the sausage. Once it’s fully cooked through, remove it from the pan but leave the pan drippings.
  4. Cook the onions, cut outs from the peppers, diced carrots and celery in sausage drippings
  5. Once the onions are browned, add the riced cauliflower and spices
  6. Saute and stir often until the cauliflower is browned
  7. Stir in the sausage, cranberries and chopped pecans
  8. Stuff the peppers
  9. Bake the stuffed peppers for 30 minutes or until the peppers are soft
  10. 10. Enjoy!
