I love ginger everything! You name it, ginger beer, ginger candy, ginger cookies, ginger gelato, gingerbread, ginger ale, pickled ginger with my sushi but most of all, I love my ginger chicken with green beans!
When I walk into my favorite Chinese take out restaurant they already know what I’m ordering before I get to the counter…. ginger chicken with green beans, steamed rice and a spring roll. As good as it is I know it’s full of unhealthy fats, salts, sugars and soy. So I recreated my favorite take out at home. Rachael Ray calls these types of recipes make your own takeout (myoto).
My ginger chicken with green beans is full of healthy fats, plenty of vegetables and organic chicken. I think it tastes better than what I can get at the restaurant!

Ginger Chicken with Green Beans
Ingredients
- 2 T Avocado Oil or Olive Oil
- 2 Organic Chicken Breasts
- 1 lb Green Beans
- 1 Red Bell Pepper
- 1 inch Ginger Root Sliced
- 2 Green Onions
Sauce:
- 2 T Rice Wine Vinegar
- 1 T Sesame Oil
- ¼ cup Coconut Aminos
- 1 tsp Fish Sauce
- 1 inch Ginger Root
- ¼ tsp Granulated Garlic
- ¼ tsp Red Pepper Flakes
Instructions

Brown the chicken in 1T avocado oil until no longer pink in the middle

Remove the chicken from the pan

Add the green beans with the other 1 T of avocado oil to the pan and cover with a lid to steam them for 5 minutes, stirring occasionally

Add the green onions, bell pepper and ginger root and saute for another 3 minutes

While the veggies are cooking, mix all the sauce ingredients together in a mixing bowl

Pour the sauce over the veggies and add the chicken and any juices from the chicken back to the pan

Saute for 5 minutes with the lid off

I have never heard of coconut aminos before. Is that what looks like white sesame seeds in this picture? Would you find it in the same section of the grocery store?
Hi Charlene – coconut aminos is a replacement for soy sauce. You can find it on the International foods aisle in your grocery store near the soy sauce.
