This Baklava Oatmeal Bake was created when I went to the Greek Festival in Charlotte with my friend Susan.
We listened to the music, shopped and ate all the yummy food. If you know me, you know that standing in line is one of my least favorite things to do. But standing in line with the sun blazing down on you is the worst! At the Greek festival, you stand in long lines, on the black asphalt. The sun is blazing down on you while you wait for gyros, spanakopita and Greek fries. And it’s totally worth the wait!
The best part of the Greek festival is the dessert tent, where you can purchase all the homemade goodies and take them home to enjoy for days.
Of course I had to buy all the delicious baklava.
They also had this baklava crumble that they piled on top of vanilla ice cream. It was heaven in my mouth on this hot day! I told Susan I was going to come up with a baklava inspired dish. At the time, I was thinking it would be baklava granola, to sprinkle on Greek yogurt. Later, I decided to do an oatmeal bake.
This oatmeal bake has all the flavors of baklava without all the guilt. It’s loaded with fiber-filled oatmeal, heart-healthy cinnamon, pecans and walnuts which have omega-3 fatty acids, vitamins A & E and folate. You can feel good about eating this baklava inspired dish for breakfast!

Baklava Oatmeal Breakfast Bake
Ingredients
- 2 cups oats
- 3 tsp cinnamon
- ½ tsp salt
- 1 ½ cups almond milk
- 1/3 cup honey
- 3 eggs
- 3 T butter
- 2 tsp vanilla
- 1 tsp baking powder
- ½ cup chopped pecans
- ¼ cup chopped walnuts
Instructions

Preheat oven to 375
-
Mix all ingredients together and pour into an 8x8 baking dish

Bake for 45 minutes

I like this dish served warm with extra honey drizzled on top.

I might have to come up with that Baklava granola after all. How good would that be over some Greek yogurt! Ok, you talked me into it. I’m adding granola to my list of recipes for the blog.
I love Baklava but feel so guilty every time I indulge in those flakey layers and sweet honey goodness. If this can get me my “fix” without all the guilt, I will definitely try this recipe. Thanks for sharing.

I have never tried Baklava but it looks like it’s apple pie with nuts instead of apples. That combination of cinnamon and nuts and oatmeal sounds delicious and I could see eating this not just for breakfast but any time I needed a filling snack. Looks yummy. Thanks for sharing!
